The grapes are macerated in whole bunches for about 10-15 days depending on the vintage. They use a slow vertical press, and the wine is an assemblage of free run juices as well as macerated juice. Aged for a short time, 5-6 months on fine lees in fiberglass tank. The epitome of the convivial nature of the wines of Babass, with its low avb (at 9% but feels much lower around 8%) and its intense mineral nature. By no means a simple wine for quick consumption, even though it’s extremely tempting to drink fast.
