Fruit from the Bihl lieu-dit which sits just across the main road on the opposite side of the valley, and whose name means ‘shining’. The site is mainly limestone and clay planted with approximately 70 percent Riesling and 30 percent Sylvaner. The exact blend changes per vintage, but both grapes are alway harvested and fermented together, and the final wine is always a majority Riesling. Jean-François attributes the bright and mineral rich acidity to the soils on this side of the valley, which are finer and more delicate. Maybe our favorite site which Jean-François works, producing a wine that’s always unmatched in terms of minerality. A purely mineral experience with white florals and a blasting grapefruit-like acidity. Taught and singular on the palate, it’s so effective with just a handful of elements at play.
