The wine that’s become the flagship of the domaine in recent years. Pinot d’Auvergne from very old vines (up to 120 years), from a vineyard on the Puy d’Anzelle, a small eroded volcanic peak near the commune of Cournon, outside of Clermont-Ferrand. A unique composition of soils with a mixture of sandy clay-limestone, and basalt. The rockiness of the vineyard depicted on the label. Since 2020 they’ve added a very small percentage of Chardonnay from the same site. Part destemmed and part whole bunches, the grapes macerate for 1 week, semi-carbonic. The direct press juice from the Chardonnay is then added and the wine ages for 13 months, half in old oak barrel and the last half in sandstone amphora. This wine is depth and intensity personified. So incredibly rich on the nose it comes across as umami, and salt. Smoke, plums, herbs and salt.
