Canta Mañana 2022

The wonderous rosé of M. Castex. Arguably the greatest natural rosé in France, just as it was in the days of Le Casot. A benchmark in its category. A blend of 4 grapes, Mourvèdre, Grenache Gris, Grenache Noir, and Syrah. From centuries old vines on shale, sand, clay, and native limestone. Made in the Saignée method, which involves layering or “bleeding” of the red grapes into the white. The Grenache Gris is macerated over two days, some red is added but quickly pressed after fermentation. Very light in color at this stage, then more red juice is added to increase the color. A rosé with magnitude and concentration, disproving any notion of rosé being a simple wine style. As with all the wines of 2022, a drier, more aromatic presentation because of the difficult vintage. It smells like a breath of fresh air, completely transporting you. All floral on the nose with Mediterranean herbs and soft candied fruit. On the palate it’s broad yet extremely liquid, with a dense fluid texture.
