CC 2022

A blend of 2 parts Chardonnay. Half Chardonnay on “pierre dorées” or clay-limestone soils from the South of Beaujolais, and the other half, Chardonnay from the Gergovie plateau, just south of Clermont-Ferrand in Auvergne, on basalt soils. Both halves are fermented and aged separately, the Beaujolais Chardonnay in large foudre and Auvergne Chardonnay in stainless tank. Extended aging on lees for both with blending of the two just before bottling. Lemon candied fruit with a vibrant mineral sensation on the palate.
