Made since the Griottes times as the cuvée “La Griotte”. This wine had previously been some combination of Cab Sauv and Cab Franc. Since recently, Patrick vinifies Homo Ça Coince as 100% Cabernet Sauvignon. Vinified in the same manner as Églantine, the fruit sees several months of maceration (approximately 3 months) with aging further in Patrick’s buried amphorae. Dark, almost black in color, this is another wine with big fruit and serious concentration. Inkiness and spice with cassis and blackberries. There’s rustic qualities and stemmy bitterness brought about by the whole clusters in maceration. There’s significant tannins present while the fruit has an elegance and length in the mouth. About as powerful and concentrated as any wine we’ve encountered from Patrick. We could easily see this paired with grilled foods or anything with the flavor to match its intensity. Brilliant, teeth-staining goodness from the wild-man of the Anjou forest!
