Kassette B 2020

50% Alicante Bouschet and 50% Merlot from the Carcassonne terroir (Aude). Made In 2 different vats. The Alicante is worked in whole bunches for both vats. The first half is completed with half of the Merlot pressed directly. The second half is completed by the rest of the destemmed Merlot. 3 weeks of maceration for the first and 15 days for the second. Pure grape juice, nothing else. Nothing is added, nothing is removed. Sappy, ripe, dark and blue fruit on the nose with hints of clove. Blueberry pie with bright citric acid and soft tannins to match.
