100% Cabernet Sauvignon from the Rademacher vineyard, a small 1 acre vineyard on the western side of the Sonoma Valley farmed by a close friend. Planted in the late 90s, it has never seen chemical applications. Destemmed into open-top fermenters, with manual punch-downs done until dry and then pressed into neutral oak barrels to age for 12 months. The big fruit and balance brought this young Cab to market sooner than previous years. Inky dark fruit like black cherry and current as well as eucalyptus, black pepper, and cedar are present. A high level of freshness and drinkability at 14.7% abv., there is classic Cab structure here and is something that could be laid down for quite some time. In line with the cult Cabernets produced by Toni Cotturi.
